The first of a new Forager’s Series, Spruce Tonic is a seasonal offering (this run is super limited; a single batch) that celebrates the bounty of Newfoundland spring. Spruce tips, alder buds, peppermint, black currant, juniper, raspberry leaf and sweet gale are combined with fresh citrus, lemongrass and, of course, cinchona tree bark, to make an old-style tonic that is bitter and herbal, with heavy citrus notes. The sweetness is amplified with a dose of honey and balanced with a heavy hand of Newfoundland sea salt, from Newfoundland Salt Company. Mixing Instructions:
Add 1 oz of The Third Place Cocktail Co., Spruce Tonic to 2 oz of your favorite gin or vodka (we prefer a juniper forward, London dry gin) and 2oz of fizzy water to a rocks glass filled with ice. Stir to combine.

Spruce Tips:
Available only for a limited time each spring, spruce tips provide a beautiful citrus flavour. Traditionally made into tea, spruce tips provided indigenous people and Canada’s earliest settlers with a valuable source of vitamin C during the long winter months. Now a valued culinary ingredient, fresh spruce tips are delicious pickled, or cooked into a sauce with fish, local mushrooms or pork.
Alder Buds:
Wonderfully bitter and peppery, a small amount of alder goes a long way. Added to support the bitterness of the Cinchona bark found in Tonics, alder provides some additional complexity.
Sweetgale Buds:
Also known as myrica gale, sweetgale is mildly astringent and pleasantly bitter. As the buds open in the spring, the flowers are covered in gorgeous pollen that is floral and sweet.

The Third Place Cocktail Co. makes all of its products on a magically little island in the north Atlantic called Newfoundland. We love it here but sometimes it takes a little while longer for things to get to and from this little place so please be patient. We are committed to not making money on shipping costs so here is what we have decided to do. We will charge a flat rate shipping of $15 dollars on orders of up to 4 bottles shipping within Canada. Orders of more than that and orders outside Canada will be charged based on what the actual shipping costs are.
